Myskikurpitsa Mac' n cheese / Butternut squash mac' n cheese

Tänään valmistin myskikurpitsasta ja pastasta herkullisen vuoan! Juusto ja leivänmurut sopivat herkullisen kurpitsan kanssa loistavasti.
Aloitin eilen kuorimalla, pilkkomalla ja paahtamalla kurpitsan. En pystynyt olla ottamatta kuvaa kurpitsanpuolikkaista. On ne vaan niin nättejä!
Ainut kauniinvihreä asia, minkä lähimetsästä löysin, oli kuitenkin vai pari kuihtunutta saniasta, jotka laitoin kauniin oranssien kurpitsojen viereen :D Viimesyksyn käpyjäkin oli vielä maassa ja keräsin ne myös kuviin.
Myskikurpitsan maku on hieman makeahko, mutta mielestäni todella hyvä paahdettuna, hieman suolalla ja pippurilla maustettuna. Kurpitsojen väri saa pimeänäkin aikana hieman aurinkoisuutta keittiöihin!

Oh my god.. This was just perfect cheesy meal in a sunny spring evening. I couldn't resist, and took second, even third plateful of this yummines. I used butternut squash for the first time ever and I truly loved it. You know, when you taste your own creations for the first time and start doing these weird sounds like 'Oh my, it's so good. Yummmm!'. OK, now I feel embarrassed. Is it just me or do you have this weird habit doing sounds like that? I tasted the sauce and it was heavenly. Just heavenly.
I started with peeling, chopping and seeding the butternut squash. I roasted it, tasted it and oh my. Please, don't do it, you won't have enough sauce if you are like me. I couldn't stop snacking those little bits of heaven. I was like a little kid with her candy, who can't stop eating. I really felt like that.
The orange color of the squash was so beautiful and bright I had to take a pic of it (of course with my orange knife, which actually looks quite nice in that pic, to be honest).  Don't you think it's pretty too? I know you do.
When the cheesy smell starts to sneak out of the oven.. Well, that's when my nose and I ran to see if the meal was ready yet. It wasn't. But I couldn't resist, and took it out of the oven. I tasted it and guess what. It. Was. Delicious. I put it back into the oven and cooked it a bit more, took it out and started to take these pics (after covering the holes I made while tasting, oops). But after this, it was all cold and we had to re-heat it in the microwave. Food blogger life, you know?

Resepti:
1 pieni myskikurpitsa
2 rkl oliiviöljyä
(meri)suolaa ja pippuria

n. 8 dl pastaa
2 1/2 kuppia maitoa
2 rkl voita
3 rkl vehnäjauhoja
1/8 tl muskottipähkinää
1 rkl rosmariinia
8 siivua cheddar-juustoa
1/2 kuppia raastettua kermajuustoa
3/4 kuppia leivänmuruja

Pilko, kuori ja poista siemenet myskikurpitsasta.
Laita isot kurpitsakuutiot kulhoon ja sekoita oliiviöljyn, suolan ja pippurin kanssa.
Kaada leivinpaperilla vuoratun pellin päälle, ja paahda kurpitsaa 200 asteessa noin puoli tuntia. Käännä kurpitsat kerran paahtamisen puolivälissä.

Keitä pasta pakkauksen ohjeen mukaan.
Soseuta kurpitsa blenderissä tai sauvasekoittimella. Lisää 1/2 kuppia maitoa. Tämä tekee kurpitsasta hieman löysempää.
Sulata voi isossa kasarissa ja lisää jauhot ja raastettu tai valmiiksi jauheena ostettu muskottipähkinä (jos käytät jauhetta, voit laittaa sitä hieman enemmän). Sekoita vispilällä, noin 2-3 minuuttia, kunnes voi hieman ruskistuu ja tuoksuu pähkinäiseltä.
Lisää loput 2 kuppia maitoa, ja sekoita kastiketta, kunnes se on tasaista. Anna saostua koko ajan sekoittaen.
Lisää kurpitsa ja rosmariini.
Kaada valutettu pasta kastikkeeseen.

Voitele noin 20cmx30cm vuoka ja kaada puolet pastasta siihen. Pilko tai revi sulatejuusto hienommaksi ja lisää se pastan päälle. Kaada loppu pasta cheddarin päälle. Ripottele vielä kermajuusto ja leivänmurut vuoan päälimmäisiksi ja paista noin 20-30 minuuttia, kunnes kastike alkaa hieman kuplia ja leivänmurut ovat ruskettuneet. Anna vetäytyä noin viisi minuuttia ennen tarjoilua.

*Voit käyttää kaupan korppujauhoja, tai tehdä omat leivänmurut blenderissä vuoan päälle

Butternut squash mac' n cheese:
1 small butternut squash, peeled, seeded and chopped
2 tbsp olive oil
(sea)salt and pepper

1/2 pound elbow macaroni (or any other pasta of your choice)
2 1/2 cups milk
2 tbsp butter
3 tbsp flour
1/8 tsp ground nutmeg
1 tbsp fresh chopped rosemary
2 cups shredded cheddar cheese (or any other cheese(s) of your choice)
3/4 cup breadcrumbs

Preheat oven to 200C/400F degrees.
Place butternut squash chunks into a large bowl. Toss with olive oil, salt and pepper. Place on a large baking sheet, and bake for about 20-30 minutes, until tender, turning once.
While the butternut squash is baking, cook the pasta according to package directions and drain well. Set aside.
Add butternut squash to food processor or blender, and puree until smooth. Add 1/2 cup of milk, and blend again, until smooth and creamy. The milk will help the mixture loosen up a bit.
In a large skillet, over medium heat, add the butter. When the butter is melted, add the flour and nutmeg. Whisk constantly for 2-3 minutes, or until the mixture is brown and smells nutty.
Add the remaining two cups of milk and whisk until smooth. Turn to high and bring it to a boil, while continuing to whisk. After the sauce has thickened, turn heat to low and add in the butternut squash and fresh rosemary. Add the macaroni and stir until the pasta's well coated. Season with salt and pepper.
Grease a 2 quart casserole dish and pour half of the macaroni noodles into the pan. Add half of the shredded cheese(s). Then add rest of the noodles and the remaining cheese. Sprinkle the breadcrumbs on top.
Bake for 25-30 minutes or until the macaroni and cheese starts to bubble from the sides. Let rest for 5 minutes before serving, if you can..
